Piping Porridge

Ingredients: 1 pkt instant porridge, 1 chinese century egg, shredded chicken, fried shallots and 1 stalk chinese parsley
Method
  1. Pour instant porridge from the packet into a medium sized cooking pot. Add water. (Follow the instructions on the packet.)
  2. Keep fire low.
  3. Add all the ingredients
  4. Turn off the fire when the porridge is boiled.
  5. Serve in bowl, add fried shallots and chopped parsley

Yang chow fried rice

Ingredients: 3 bowls cooked rice, 200g shelled shrimps, 200g mixed vegetables (carrots/beans), 2 eggs, 3 shallots, 1/2 tsp salt and cooking oil

Method

  1. Heat wok with cooking oil
  2. Add prawns, mixed vegetables and eggs, fry for one minute and dish up
  3. Add one tbsp oil, fry shallots until fragrant
  4. Add salt and pour cooked rice, stir well over high heat for five minutes (Until golden brown)
  5. Add cooked  ingredients and stir fry for 3 minutes
Be creative to make your own fried rice variation with other types of food like seafood and hot-dog.


Kiam chye duck soup

Ingredients: 1 whole duck, 200g foreleg of pork, 500g kiam chye (salted mustard green), 3 litres water, 2 pickled sour plums (sng boey), 2 thick slices of ginger, salt, pepper, 2 tomatoes (slices) and chinese parsley
Method
  1. Select kiam chye which has more stalk than leaves. Wash and cut into large pieces and soak in water for 20-30 minutes
  2. Wash duck and cut into 7-8 large pieces
  3. Wash foreleg of pork and cut into small pieces
  4. Bring water to boil. Add in duck, , kiam chye and remaining ingredients except for the tomatoes
  5. Boil until for 20 minutes and simmer until meat is tender
  6. Add tomatoes when soup is ready
  7. Garnish with chinese parsley
