Beat eggs lightly in bowl, stir in water

Heat butter in large frying pan, add curry power, stir over heat 1 minute.

Add egg mixture to pan, stir gently with a fork, cook for about 2 minutes
or until mixture starts to set. Arrange tomato slices along the centre
of omelette.

Top with combined salmon and mayonnaise.

Carefully fold sides over to close filling, cook
omelette gently until salmon is heated.
